Our butchers take Pasture-Raised Heritage Breed Pork Loin from Riverview Farms and dry cure it with fennel seed, smoked paprika, and a touch of cinnamon, and aged for 4 months in our curing cave. Our Lonza is a delicate, lean, and subtly flavored cured meat.
